Prepare the Ingredients. Peel and slice the ripe (or frozen) bananas into chunks. This will ensure easy blending and a smooth texture in the popsicles.
Blend the Ingredients. In a blender or food processor, combine the banana slices, a drizzle of maple syrup for sweetness, ¾ of a cup of coconut milk for richness, and a pinch(¼ tsp) of cinnamon for that extra layer of flavor. Blend until the mixture is silky smooth and well combined.
Taste and Adjust. Give the mixture a taste and adjust the sweetness or cinnamon level according to your preference. Remember, the flavors will mellow out slightly when frozen, so don't be afraid to add a touch more sweetness or spice if needed.
Fill the Popsicle Molds. Carefully pour the banana mixture into your popsicle molds, leaving a little space at the top to allow for expansion as they freeze.
